2 pkgs large egg roll wrappers, found in produce section
1 pkg bean threads, found in Asian markets
SAUCE-
1 cup sugar
1/2 tsp salt
3 Tbl catsup
1/2 cup vinegar
1 Tbl cornstarch
1 cup water
Instructions
Cook pork and beef well, drain, return to pan. Add grated carrot, onion, garlic, soy sauce. Mix and simmer a few minutes.
Cook bean threads in boiling water, drain, and add to meat mixture. Let mixture cool.
Spoon 2-3 Tbl meat mixture to each wrapper. Roll and seal with water. Cook in hot oil until crisp golden brown.
SAUCE- Cook everything except cornstarch and water. In a separate bowl, mix cornstarch and water. When sauce is boiling, add cornstarch and water mixture. Cook until thick.

Suggestions
Dip lumpia in sweet and sour sauce and serve with sticky rice.
