     (Thousand) Island Pesto

  Pinot, Sparkling Cranberry, Water

2 Scoops Mayonaise (reg. or low-fat)
2 Scoops Pesto (jar is fine)
Dried cranberries (optional)
Raisins (optional - Golden are cuter)
Walnuts - chopped a little/pieces (opt.)
1 apple - chop to bite size (skin = OK)
Spoonful tomato sauce (ketchup OK)
Fresh tomato (optional)
Lemon squeeze
Salt, pepper

Drop dollops of mayo and pesto in small to medium size bowl or cup.
Add nuts & berries at your leisure. Can substitute any (or no) nuts and any (or no) dried fruits). Add fresh apple pieces (water chestnuts also good). Add bite-size pieces of fresh tomato.
Squeeze lemon juice into concotion. Add spoonful of tomato sauce or marinara (a squeeze of ketchup can substitute if you don't have sauce), Salt/pepper/season to taste. Whip by hand with fork, until a think sauce/dressing is blended.
Delicious as salad dressing or veggie dip. Great spread inside wraps. Serve with crackers, cheese & grapes. Add to cold pasta for a zesty pasta salad, or to warm pasta (may want to throw in a little cream or cheese) as a rich and savory dish...
