1/2 pkg mushrooms (or replace mushrooms with more squash)
about 4 scallions
2 cups cooked brown rice
about 2/3 cup sour cream (no fat)
2 cups shredded low fat cheddar or montery jack
salsa
about 12 to 14 corn tortillas
Instructions
Cube zuchini, squash and mushrooms and boil about 2 min. Chop scallions and throw in
water for last 30 secs or so. Drain veggies and mix with rice, sour cream, and 1/2 of cheese.
Fill and roll tortillas with mixture and place in 9x13 pan (sprayed). Cover with salsa and bake
20 min at 350. Sprinkle with 2nd 1/2 of cheese adn bake 5 more min.
