     Sweet Potato Chips

Ingredients
1 tsp salt
1 1/4 tsp granulated sugar
3/4 tsp ground black pepper
3/4 tsp paprika
1/4 tsp onion powder
1/4 tsp garlic powder
1/8 tsp ground cayenne pepper
1/8 tsp ground coriander
pinch ground cinnamon
 
2 medium sweet potatoes
6-10 cups canola oil (as required by your fryer)

Instructions
Combine seasonings in a small bowl.
Slice potatoes to 1/16 inch thickness with a vegetable slicer or mandoline. Soak potato slices in cold water for 10-15 mins, then pat slices dry on a towel.
Heat canola oil in a deep fryer to 325 degrees F. When oil is hot, fry potato slices in batches for 4-5 mins, until chips become light brown. Occasionally stir slices gently while they fry. Be careful not to overcook, since the chips will continue to brown after you remove them from the oil. Remove chips to paper towels to cool and sprinkle with the seasoning blend.
