     Eggplant Parmigiana

Ingredients
1 eggplant, pealed and sliced ¼”
Cracker crumbs
Butter or margarine
Seasoned salt
16-oz. jar Meat-flavored Prego Sauce
¼ cup grape jelly
14 oz. can sliced-style stewed tomatoes
Mozzarella, sliced
 

Instructions
Moisten eggplant and coat with cracker crumbs. Brown slices in skillet using shortening of choice, and dust with seasoned salt. Combine sauce, jelly, and tomatoes and heat while frying the eggplant. When fork-tender and golden brown, transfer to an oven-safe pan or dish.
Spoon sauce over eggplant slices, and then cover with cheese. Put it under the boiler for a few minutes until the cheese is melted.
