     Pork Chops with Gruyere

Ingredients
4 loin pork chops, about 1 1/2 inches thick
salt and freshly ground pepper to taste
1 T vegetable oil
1/4 lb grated gruyere cheese
1 T dijon mustard
1 T heavy cream
1 t minced garlic
1 egg yolk
2 T dry white wine
 
2 T water

Instructions
Sprinkle chops with salt and pepper. Heat oil and brown chops in heavy skillet on both sides until cooked through but not dry, about 8 to 10 minutes per side.
Preheat broiler. As chops cook, blend cheese, mustard, cream, garlic, and egg yolk. When chops are cooked, remove from skillet. Place about 1 T of cheese mixture on one side of chop and smooth to cover. Cook chops under broiler until top is browned. Remove chops to warm platter.
Add wine and water to skillet stirrig to loosen particles. Bring to boil and stir to dissolve particles that cling to bottom and sides of skillet. Pour sauce over the chops and serve.
