     Apple Walnut Bread

3/4 cup vegetable oil
1/4 cup applesauce
3 eggs
1 3/4 cups white sugar
1 tsp vanilla extract
2 cups all-purpose flour
1 cup whole wheat flour
1 tsp ground cinnamon
1 tsp baking soda
1 tsp salt
3 cups peeled, cored and cubed apples (small cubes)
1 cup chopped walnuts

Preheat oven to 300, lightly grease two 9x5 inch loaf pans. In a large bowl stir together oil, applesauce, eggs, sugar and vanilla. In a separate bowl, sift together flour, cinnamon, baking soda and salt. Gradually, stir flour mixture into wet ingredients, mixing until just combined. Fold in apples and walnuts. Pour batter into prepared pans. Bake in preheated oven for 70 minutes.
