1 clove garlic, minced

1 md onion, minced

1/2 c chopped green pepper

3 cups boiled rice

1 t salt

2 1/2 cups canned tomatoes

Instructions |
|
|
Heat oil in frying pan, add onion, pepper, and garlic. Cook 2-3 minutes.
|

Add tomatoes and salt and blend well. Stir in the rice.
|
|
|
Cover pan and cook at low temperature until tomato juice is absorbed - about 15 minutes.
|
