Combine seasonings and rub into chicken pieces. Shake flour into plastic bag, and toss herbed chicken gently in flour
|

|
Melt shortening in two large heavy skillets. Add chicken and brown slowly over moderate heat, making sure pieces don't overlap
|
|
|
After 15 minutes reduce heat and cover. Cook 40 minutes turning once.
|
|
|
Uncover skillet last 10 minutes to allow chicken to crisp
