Place shortening in a 9 inch cast iron skillet in oven. Preheat to 425 degrees.
In a large bowl, combine next 6 ingredients. Make a well in the center of the mix; set aside.
In another owl, combine eggs, milk, & oil. Add to cornmeal mix and stir til moistened.
Remove skillet from oven. Carefully pour in batter. Return to oven & bake 20 minutes. Cool 10 minutes and serve.
Per serving- 171 calories, 10g fat, 390 mg sodium, 16g carb, 1g fiber, 4g protein. Daily values- 3% vit A, 1% vit C, 10% calcium, 5% iron.
