     Spinach & Goat Cheese Pasta

1 box whole wheat penne pasta
1 large package of fresh spinach leaves
4 ounces goat cheese
4 ounces cream cheese
juice of half a lemon
1 to 2 garlic cloves
3 tablespoons olive oil
salt and pepper to taste
grated or shredded parmesan

Add pasts to salted boiling water, cook as recommended.
Combine all ingredients into a food processor or blender. (reserve parm and a small handful of spinach leaves to top with) Blend
Add to cooked pasta - may need to add a little reserved pasta water if sauce is too thick.
Chop reserved handful of spinach and top with pasta. Srinkle with parm and serve.
Serving Suggestions
May add cooked chicken or Italian Sausage
