Preheat oven 350.
MIx together first three ingredients until well incorporated. Now mix in 1/4 cup of the pine nuts. Take tablespoon size amounts of the dough and roll into balls. Roll the balls in sugar and place on a cookie sheet about 2 inches apart. Using a fork, press down cookies and sprinkle the tops with remaining crushed pine nuts. Bake for 10-11 minutes until just going golden brown.
