     Chicken Cacciatore - Crockpot

3 lbs chicken thighs, skin removed
1 large onion, sliced
1 green pepper, sliced
1 red pepper, sliced
1 cup mushrooms, sliced
4 cloves garlic, minced
1/2 cup red wine
1 cup chicken broth
1 14-oz can diced tomatoes, drained
1 6-oz can tomato paste
1 tsp Italian seasoning
1/4 tsp red pepper flakes
salt and pepper to taste
1 piece

Season chicken thighs with salt and pepper, brown in oil in skillet (optional); place onions in bottom of crockpot; place browned chicken on top of onions.
Combine remaining ingredients and pour over chicken in crockpot.
Cook on low 6-8 hours until chicken is thoroughly cooked. For thicker sauce, dissolve 2 tablespoons cornstarch in 3 tablespoons water, stir into sauce and cook on high, uncovered until thickened.
