     Baked Tofu Wrap with salad and melon

Instructions
3 oz. baked tomato basil tofu 1/3 medium fresh tomato 1 tbsp. mayonnaise, egg-free, low fat 1 whole wheat (approximately 6 inch diameter) tortilla
Slice tofu thinly. Rinse and slice tomato. Spread mayonnaise on tortilla; place a layer of tofu and then tomato slices on tortilla; roll up and serve.
Also Include- 2 cups mixed salad greens 2 tbsp. salad dressing, low fat or nonfat; low sodium 1 1/2 cups honeydew melon 1/4 oz. soy nuts
