Boil the potato. Drain well and mash thoroughly.
Mix in a small amount of vanilla. Add small
amounts of confectioner's sugar until the mixture
forms a rollable dough. Roll out on wax paper
covered in confectioner's sugar. Spread peanut
butter over the top of the dough. Roll as for a
jelly roll.
