     Ranch Salad with Roasted Vegetables

Ingredients
1 lb red potatoes (about 6) cut into chunks
2 carrots, sliced
1 small red onion, cut into wedges
1 tbps olive oil
1 pkg torn romaine
ranch dressing
parmesan
Sea salt and pepper to season vegetables
 

Instructions
Pre heat oven to 425F. Coat vegetables with olive oil and season with salt and pepper. Bake on pan for 25 min or until tender. Stir once or twice.
Toss lettuce with dressing. Serve lettuce and top with vegetables and parmesan.
