Cook meat (seasoned with salt/pepper) and strain.
Place back on med-heat and add all other ingredients except chips and grated cheese. Use seasonings to taste.
Simmer until ingredients are warm and velveeta is melted.
Layer chips, then sauce, then grated cheese in oven pan. Cook at 350 until cheese on top is melted.
