10 cup cookies

Ingredients
-
 1 c sugar
-
 1 c brown sugar
-
 1 c shortening
-
 1 c peanut butter
-
 3 large eggs, beaten
-
 1 c flour
-
 1 c uncooked quick-cooking oats
-
 2 t baking soda
-
 1 t baking powder
 
-
 1 c chopped pecans
-
 1 c flaked coconut
-
 1 c raisins
-
 1 c chocolate chips
Instructions
Preheat oven to 350. Combine first 4 ingredients in large bowl, beat at medium speed with an electric mixture is creamy. Add eggs beating well.
Combine flour and next 3 ingredients. Add to peanut butter mixture and beat well. Stir in remaining ingredients. Drop by spoonfuls on lightly greased cookie sheets. Bake for 10-12 minutes or until golden. Remove to wire racks to cool.
I would just use parchment paper, instead of greased cookie sheets.
