CHIPOTLE SHIRMP & PINEAPPLE KABOB

Ingredients
-
1 C bottled chipotle marinade, divided
-
1-1/2 lbs large shrimp, peeled and deveined
-
1 Can (20oz) pineapple chunks, drained
-
1 med red onion, cut into chunks
-
2 red or green bell peppers cut into chunks
-
6 wooden skewers
 

Instructions
SOAK 6 skewers in water POUR 3/4C marinade over shrimp in sealable plastic bag MARINATE in refrigerator 30 min REMOVE shrimp and discarde marinade THREAD all ingredients onto skewers GRILL 8 min, turning and brushing with remaining 1/4 C marinade or until shrimp turns pink Discard and remaining marinade.
