Combine all ingredients except- sour cream, noodles and parsley in a slow cooker. Low 6-8 hours or high 4-5 hours. Just until the meat is tender. Stir in sour cream just before serving. Serve over noodles. You can mix the noodles in after the sour cream and put on keep warm. Not too long or the pasta will break down.
Use a good quality meat for this, it really does make a difference.
