Preheat oven 325F. Melt chocolate chips in double boiler or in microwave safe container. Stir till
smooth. Remove from heat.
Combine Flour, baking soda, baking powder and salt.
In large bowl cream vegetable shortening and both
sugars. Beat in the eggs and vanilla extract. Beat
in melted chocolate. Gradually blend in flour,
oatmeal, coconut and cherries.
Drop by spoonfuls 1 1/2 inch apart on cookie pan.
Bake 12-15 min or until lightly colored.
Transfer to cooling grid. Cool completely. Note
cookies crips as they cool. Do Not Over Bake.
