Ingredients
4-6 potatoes,cooked and chilled
bacon drippings or cooking oil to coat skillet
salt and pepper
 

Instructions
Place 3 layers paper towels on the counter next to the stove. Cut the cooked potatoes into thin slices.Leave the skins on. Coat the bottom of the skillet with bacon drippings or oil.Heat the skillet over medium-high heat. Cover the bottom of the skillet with potato slices.Sprinkle salt and pepper over them. When the bottoms of the slices are brown,use the spatula to turn them over to brown the other side. Use the spatula to put the fried potatoes on the paper towels to drain. Fry the rest in the same way.If they start to stick,add more oil or bacon drippings.
Serve on a pretty platter.
