For the glaze- Heat the olive oil over medium heat in a large saucepan. Add onions and garlic and sautee until translucent. Add mustards, pineapple juice, apple juice, brown sugar, and honey. Season to taste, with salt and pepper. Turn down the heat and simmer for 15-20 minutes.
Slice ham from left to right, then right to left making diamond on the top. In each point of a diamond, press in a clove.Place ham in roasting pan. Add a small amount of water to the bottom of the pan.Place in oven and bake for 1 1/2 hours at 350 degrees.
For the salsa- Heat the oil in a pan. grill the mago and pineapple about 3 minutes per side until carmelized. Remove and let cool. Slice the fruit into 1/2 by 1/2 inch. Toss in a large bowl with the remaining ingredients. Set aside.
Liberally apply mustard glaze to ham and bake the ham for another 30 minutes until the glaze begins to turn brown and carmelize. Remove, cover with foil and let stand for 10 minutes. Slice and serve with salsa.
