1 large egg
1 c. flour
3/4 c. milk (combine with 2 T white vinegar and let sit for 5 min for buttermilk pancakes)
1 T packed brown sugar (or 2 T white sugar)
1 T. vegetable oil
1 t. baking pwd
1/2 t. baking soda
1/2 t. salt
2 T melted butter

(If making buttermilk pancakes, add vinegar to milk and let sit 5 min. Then beat egg and melted butter into the milk.) If making regular pancakes... Beat egg until fluffy. Mix dry ingredients well and then beat in remaining ingredients just until smooth. (for thinner pancakes, stir in extra 1-2 T. milk)
Heat griddle to 375. Grease with butter if necessary.
For each pancake, pour slightly less than 1/4 c batter onto hot griddle. Cook pancake until bubbly on top, puffed and dry around edges. (AS SOON AS THE BUBBLES JUST BEGIN TO BREAK) Turn and cook other side until golden brown.
