     Thai Style Chicken Thighs

Ingredients
1 large onion, quartered and sliced thinly
1 cup mango or pineapple salsa- see subs.
1 clove garlic sliced finely
3 teaspoons Asian fish sauce, divided
4 skinless chicken thighs, approx 5 oz each
3 sweet bell peppers chopped coarsly- see subs.
1/4 to 1/2 cup fresh chopped cilantro (mint or basil)
Juice of one Lime
 
Substitute 1- Salsa; Use your favorite salsa and add pineapple or mango
Substitue 2- Peppers; Recipe calls for 2 red and 1 green; I like red, yellow and green

Instructions
In the bottom of your slow cooker combine onion, salsa, garlic, and 2 tsp fish sauce. Season chicken with salt and pepper, then place on top of salsa mixture. Top chicken with bell peppers. Cover and cook until chicken is fork tender. High heat setting 3-4 hours. Low heat setting 6-8 hours.
When chicken is finished, remove and set aside. Make sauce by adding remaining ingredients to cooked veggies. I prefer fresh cilantro and lime juice. Cook on low for about 5 minutes to heat through.
Each serving (recipe makes 4) is four points in Weight Watchers. Serve with whole wheat noodles, rice noodles, or simply hot, sticky, white rice.
Serving Suggestions
Aisan hot sauce for a little 'kick'. Sake!
