     Beignets

Ingredients
2 1/4 tsp. dry yeast
1 1/2 Cups Water
1/2 Cup Sugar
1 tsp. salt
2 Eggs
1 cups evaporated milk
7 Cups Flour
1/4 Cups Shortning
1 Quart Vegetable Oil
 
1/4 Cups Powdered Sugar

Instructions
Dissolve yeast in water. Add sugar, salt, eggs, milk, and blend well. Mix 4 Cups flour, beat til smooth. Add shortning and 3 cups flour. Chill for 24 hours.
Roll dough 1/8 thick. Cut into 2 1/2 inch squares. Fry in oil at 360 degrees.
When beignets pop up, drain onto paper towels. Put powdered sugar on it.
