     Lo Carb Breakfast Pizza

Lo carb wrap (Flat out brand is recommended)
Vidalia Onion, finely chopped
Egg whites
Sliced Mushrooms
Shredded cheese (I use double pizza by Sargento)
Chicken or Turkey Sausage
Pizza or Spaghetti Sauce (I use anything with low sugar)
Olive Oil
Italian Seasoning

Pre-heat oven to 375. Add small amount of olive oil to skillet, heating on med-high. Add chopped onion and sausage to pan. When oven is hot, place tortillas directly on oven racks. When sausage is cooked through, add mushrooms, stirring frequently. Flip the tortillas to be sure the other side is toasty. When mushrooms are soft, add egg whites and scramble everything together. Remove pan from heat.
Take tortillas from oven and spread tomato sauce evenly on them. Top with scrambled eggs. Sprinkle with shredded cheese and italian seasoning. Return to oven until cheese is melted.
Remove and let cool. Use a pizza cutter and slice into desired size. I like to slice it into tiny squares! Enjoy this healthy lo-carb breakfast. Perfect post-workout snack.
