Dissolve yeast in water in large bowl. Add everything except only 1 c of the all purpose flour. Beat well with a wooden spoon about 1 minute. Stir in another 1 1/2 c regular flour. Knead for about 10 minutes, working in additional flour. Place in well buttered bowl. Brush top with butter. Cover, put in warm place and let rise until double, about 2 hours. Punch down, divide in half. Roll each portion into a rectangle, roll up and place in 2 greased 8x4x2 bread pans. cover and let rise again, Bake at 350 for 30-40 minutes or until loaves sound hollow when tapped. Remove from pans, cool on wire racks, brush with additional melted butter if desired.
