Basque Boiled Rice Pudding Recipe

Basque Boiled Rice Pudding

Ingredients
-
10 c whole milk
-
1 cinnamon stick
-
3/4 c rice
-
3/4 c sugar
-
1 t vanilla
-
Ground Cinnamon to sprinkle on top
 

Instructions
Heat milk and cinnamon stick until scalded, not boiling. Add rice, stirring until it boils. Lower heat to simmer, stir often to keep from sticking. Keep it boiling slowly. This takes about 45 minutes or until rice is done and it has boiled down to about 1/4 of the milk. Add sugar and vanilla. Stir until sugar is melted. Pour in bowl, sprinkle with cinnamon, coating very well. This can go in the crockpot on high for about 4 hours also, leave the lid off. I would put it in the crockpot after adding the rice and getting it back to a boil.
