     Chicken Enchiladas

Ingredients
2 lbs Chicken Breast, shredded
2 cans Cream of Chicken Soup
1 pint Sour Cream (2 cups)
1 (8 oz) can diced Green Chilies
2 cups shredded Monterey Jack Cheese
2 cups shredded Cheddar Cheese
12 or so soft, Corn Tortillas
Salt and Pepper
 

Instructions
Cook and shred chicken. Mix soup, sour cream, green chilies, salt and pepper. Cut corn tortillas into 1/8ths. Spray non-stick spray into a 9x13 baking dish. Fit tortilla pieces puzzle style on bottom of dish. Add half of chicken, then 1/3 of creamed mixture, cover with layer of puzzle fit tortillas, then 1/3 of jack cheese, then 1/3 of cheddar cheese.
Place another layer of tortillas, rest of chicken, next 1/3 of creamed mixture, 1/3 of jack cheese, 1/3 of cheddar cheese and last layer of tortillas. Top with remaining 1/3 of creamed mixture and last 1/3 of jack and cheddar cheeses.
Bake for 45 minutes at 350 degrees.
