     Laurie's Orange QuickBread

1 orange
1 cup orange juice
1 egg
1 tsp baking soda
1/2 tsp salt
1/2 cup sour cream
1 cup sugar
1 1/2 cups flour
4 tbsp melted butter or margarine

Use a microplane to remove orange zest into a medium-sized bowl. Squeeze orange and add extra orange juice to bring to one cup measure.
Add egg, sour cream, and butter and wisk with sugar. Mix dry ingredients together and fold into the wet ingredients.
I use a large brownie pan instead of a break pan so the corners aren't overcooked. Bake for 30 minutes at 350.
Variation- Grapefruit QuickBread. Substitute a small grapefruit for orange as well as rind. In my vision impairment, I thought a grapefruit was an orange...and we loved it. It is slightly more tart, but I must admit that we do love grapefruit. Another Variation- Lemon Poppyseed QuickBread. Substitute a lemon for orange as well as rind and use extra water to make one cup liquid. Add 1 tsp poppyseeds. Yet Another Variation- Mango Orange QuickBread (I'm not kidding). Substitute ground pulp of one mango for orange and use 1/2 cup orange juice.
