     Corn Meal Dressing

Ingredients
1 cup Quaker or Aunt Jemima corn meal
2 cups cold water or chicken stock
1/3 cup butter or margarine
1 cup chopped celery
1/2 cup chopped green pepper
1/2 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 teaspoons poultry seasoning
 
5 cups toasted bread cubes
2 eggs, beaten

Instructions
sSauté veggies in butter.
combine corn meal and water in saucepan. cook until mixture thickens, stirring constantly. combine hot mush with remaining ingredients. (use an additional 1/2 cup warm water for more moist stuffing). bake in covered casserole in slow oven (325) 50-60 mins
