     Strawberry Cupcakes

1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 cup granulated sugar
1/2 cup canola oil
1 tablespoon white distilled vinegar
1 teaspoon vanilla extract
8 ounces frozen or fresh strawberries strawberries, crushed or pureed
Buttercream Frosting
12 to 16 whole strawberries, stemmed

Preheat the oven to 350. Lightly grease muffin tin or fill with muffin cups with cupcake liners. Mix together the flour, baking soda, and sugar in a bowl. In a separate bowl, combine the oil, vinegar, and vanilla. Add the strawberries and stir to combine. Create a well in the dry ingredients. Stir to combine. Pour batter in the prepared muffin tins, filling them halfway.
Bake for 30 minutes for cupcakes or until the toothpick comes out clean. When cool, frost the cupcakes.
