(WOOD) Blackened Catfish Filets

Ingredients
-
4 filets - boneless and skinless (8 to 10 oz each)
-
1/4 cup blackened seasoning
-
2 TB olive oil
-
4 TB butter melted
 

Instructions
Preheat oven to 400 degrees. Heat large cast iron pan on grill till very hot.
Brush filets on both sides ith oil. Generously sprinkle seasoning on both sides. (can even dip in seasoning)
Place in hot pan and pour melted butter directly over filets. Cook for 2 to 3 minutes on each side until nicely blackened.
Place pan in a preheated oven and roast about 5 minutes untill flesh pulls apart easily with fork.
