      Broccoli and Cauliflower - Roasted

3 cups broccoli florets, cut into bite-size pieces
3 cups cauliflower florets, cut into bite-size pieces
2 Tbsp olive oil
1 Tbsp honey
1 Tbsp balsamic vinegar
1 Tsp. Dijon mustard
1/4 tsp salt
1/8 tsp black pepper

In large bowl combine broccoli and cauliflower. In a jar with tight fitting lid, combine oil, honey, vinegar, mustard, salt, pepper and shake well. Pour dressing over veggies and toss to coat.
Spray baking dish with non-stick cooking spray. Bake veggies in dish at 450 deg. for 15 to 20 mins.
Serving size is 2/3 cup. 81 cal., 5 gram fat, 131 mg. sodium, 2 grams fiber.
NOTE- We doubled the dressing amount.
