     Lemon Chicken with Mushrooms

Ingredients
6 boneless chicken breasts
1 tbsp olive oil
1 lemon
1/4 cup butter
3 cups sliced mushrooms
1/2 cup chicken broth
2 tbsp flour
1 tbsp chopped parsley
 

Instructions
Preheat oven to 400 degrees.
Put the olive oil in an 8x8 glass baking dish. Add chicken breasts, coating each side with oil. Squeeze ½ of the lemon over chicken. Slice the rest of the lemon and place one slice on top of each piece of chicken. Bake for 30 to 40 minutes (until brown).
In a large skillet, melt 1/4 cup butter. Add sliced mushrooms. Cook and stir until mushrooms are brown and have exuded their juices, about 6 minutes. Sprinkle with flour and stir. Add chicken broth, stirring to make a medium thick sauce. Allow to reduce, adjusting with more broth as needed to make a creamy sauce. Add fresh parsley.
Spoon the sauce over the baked chicken breasts and enjoy!
