     French Toast Bake with Brown Sugar Peaches

Ingredients
4 croissants
3 eggs
1 cup milk
2 tsp vanilla
1/4 tsp salt
1/8 tsp nutmeg (I use 1/4 tsp)
1 can peaches, drained (I use a big one... 740mL)
1/4 cup brown sugar
1 tsp cinnamon
 

Instructions
Grease a 9x13 pan. Tear croissants into bite-sized pieces and place them in a single layer in the pan.
Whisk together eggs, milk, vanilla, salt and nutmeg. Pour over bread.
Top with peach slices. Sprinkle with brown sugar and cinnamon. Cover with foil and chill in the refrigerator overnight.
Preheat oven to 350°F. Bake 30 minutes covered, then uncover and bake for an additional 10 minutes, until puffed and golden brown. Serve immediately with maple syrup.
Serving Suggestions
We pair this with an egg bake (Wifesaver, Christmas Morning Bake, etc) and fresh fruit for a delicious brunch!
