Trim excess fat from meat; cut into 6 serving-size pieces.
With meat mallet pound meat to 1/4-inch thick.

Combine egg and milk; combine crushed saltine crackers and pepper. Dip meat into egg mixture; then into crumbs.

|
In a 10-inch skillet brown the meat, 3 pieces at a time, on both sides in hot cooking oil. Drain off excess fat.
Return all meat to the skillet.

|
Cover tightly; cook over low heat for 45 to 50 minutes or till meat is tender.
