1 Lb lowfat pre-cooked Kielbasa sausage, 1 inch pieces
3 medium sweet potatoes, peeled, cubed 1 inch
2 cups chicken broth
1/2-1 tsp dried thyme leaves
1/4 tsp pepper
2 cups coarsely chopped cabbage, 1 inch pieces
1 medium green pepper, 1 inch pieces
1/2 medium onion, thinly sliced
Instructions
In Dutch oven combine suasage, sweet potatoes, 1/4 cup broth, thyme and pepper. Cover; cook over medium heat, stirring occasionally, until potatoes are just fork tender (8-10 minutes)
Stir in remaining broth and all remaining ingredients. cover; continue cooking, stirring occasionally, until vegetables are crispy tender (4-6 minutes)
