     Fresh Apple Cake

4 cups peeled, sliced apples
2 cups sugar
2 cups flour
1 1/2 tsp baking soda
2 tsp cinnamon
1 tsp salt
2 eggs
3/4 cup vegetable oil
2 tsp vanilla
1 cup chopped pecans (optional)

Preheat oven to 350 degrees. In large bowl, stir together apples and sugar. Add dry ingredients and stir well. In separage bowl, beat eggs oil and vanilla. Stir egg mixture into apple mixture blending until mixed well. Stir in pecans. Pour into greased 13X9 inch pan. Bake 50 minutes or until cake springs back when lightly pressed. Serve with warm Apple Dessert Sauce or Powdered Sugar glaze.
Apple Dessert Sauce- 1 cup sugar 1/2 cup butter 1/2 cup heavy cream or evaporated milk 1 tsp vanilla Place all ingredients in saucepan; stir. Bring to boil over med-high heat and cook 3 min. Serve warm.
Optional Powdered Sugar Glaze (instead of dessert sauce) 1 1/2 cup powdered sugar 1Tbs. milk Stir well and add more milk little by little until it is a thick liquid to drizzle over cake. You can add cinnamon if desired.
