Cook sausage and red bell pepper over medium hight heat, stirring frequently until meat is thoroughly cooked and no longer pink; drain sausage. Add eggs and cook, stirring occasionally for 5 minutes or until no liquid egg remains. Stir in salsa and cilantro, if desired; heat through.
Warm tortillas according to package directions. Place 1/2 cup of sausage egg mixtyure onto each tortilla, top with about 1/4 cup of beans and 2 TBSP cheeses. Fold in opposite sides of tortilla, then roll up burrito style.
Serve with sour cream, avocado slices and additional salsa and cilantro if desired.
