     No Bake Butterscotch Cookies

3 1/2 cups quick cooking oats
1 package instant butterscotch pudding
1 stick butter
2 cups sugar
2/3 cup evaporated milk
1/2 cup peanut butter (optional)
1 teaspoon vanilla
Pecan Halves

Into a large bowl measure oats; add dry instant pudding mix. Stir to mix thoroughly.
In large saucepan add sugar, evaporated milk and butter. Bring to a boil; continue to boil 1 minute stirring constantly. Remove from heat; immediately add peanut butter and vanilla.
Pour over dry mixture, stirring until mixed thoroughly. Drop by rounded teaspoons onto waxed paper lined cookie sheet. Place a pecan half on top of each cookie.
When completely cool, lift each and place in covered container.
