Baked Salmon with Couscous

Ingredients
-
nonstick vegetable cooking spray
-
1 tsp reduced sodium soy sauce
-
1/2 tsp fresh grated ginger
-
1/2 cup water
-
1/2 cup small broccoli florets
-
1/4 tsp brown sugar
-
4 oz salmon fillet (1 inch thick)
-
1/2 tsp chicken bouillon granules
-
1/4 cup dry couscous
 

Instructions
Preheat oven to 450 F. Coat a shallow baking pan with vegetable spray, set aside. Combine in a small bowl the soy sauce, brown sugar, and grated fresh ginger.
Arrange filet in prepared baking pan and drizzle soy sauce mixture evenly over salmon. Bake covered for 10 to 12 minutes or until fish flakes easily when tested with a fork.
Meanwhile, in a saucepan bring water, chicken bouillon granules, and broccoli to boiling. Cover saucepan and cook for 3 minutes or until broccoli is tender. Stir in dry couscous. Remove from heat, cover and let stand 5 minutes. Serve salmon with hot couscous.
