Preheat a grill to medium. Thickly slice red & yellow onions. Brush the onions & bread with olive oil. Grill, turning once, until the bread is toasted, about 5 mins and the onions are very tender, about 10 mins. In a bowl, toss the onions with the chopped parsley; season with salt & pepper. In a small bowl, combine sour cream and dijon mustard. Spread the mixture on the toasts and top with the onions. Sprinkle with gruyere cheese and place on grill. Cover and cook until the cheese is melted, 3-5 mins. Top with more chopped parsley.
