Beat egg yolks, stir in grated potatoes and a mixture of the flour, baking powder, and salt, mix well.
Beat the egg whites until rounded peaks are formed. Fold into potato mixture.
Spoon about 2 tbsp of batter for each pancake into hot fat in a skillet. Brown on both sides.
Serve with applesauce.
