     Gingerbread loaf

Ingredients
cake - 1 1/2 cups flour
2 tsp cinnamon
1 tsp ground cloves
2 1/4 tsp ginger
1 tsp salt
8 Tbsp butter
1 cup granulated sugar
1 tsp orange extract
1 tsp baking soda
 
1 cup applesauce
frosting - 8 oz cream cheese, softened
1 tsp vanilla extract
1/2 tsp orange extract
2 1/2 cups confectioners' sugar

Instructions
Preheat oven to 350. Grease and flour a 9x5 loaf pan. To make the cake, in a medium bowl, mix together the flour, cinnamon, cloves, ginger, and salt. Set aside.
In a large bowl, cream the butter and granulated suger until fluffy. Stir in the orange extract. Mix the baking soda into the applesauce and stir into the creamed butter mixture. Add the flour mixture. Mix until smooth in an electric mixer, 2-3 minutes. Pour the batter into the prepared loaf pan. Bake for 40-50 minutes. Transfer the cake to a rack and let cool completely.
To make the frosting, beat the cream cheese until fluffy. Beat in the vanilla and orange extracts. Slowly beat in the confectioners' sugar.
once the cake has cooled, remove from the pan by placing a large cake plate over the pan and flipping it over. Spread the frosting evenly on top.
