     CAULIFLOWER CURRY

Ingredients
1/3 cauliflower
1 tomato (or small can of diced tomato)
couple cloves garlic
pinch salt
3/4 tsp turmeric
1 tsp garam masala powder
pinch of black mustard seeds,
 

Instructions
break cauliflower into florets (should have enough to fill cupped hands). set aside.
cut tomato into small bits. don't de-seed, as you'll need the water in the tomato. set aside.
let mustard seeds pop in oil before adding the other spices. mince the garlic. put some olive oil in a saucepan, and fry the garlic on low heat for about a minute-- enough to cook, but not so it gets crispy.
add cauliflower and tomato to the pan. stir to coat the cauliflower with oil, and cover. stir periodically, and re-cover. when the cauliflower looks close to done, add salt, turmeric, garam masala, and coriander. stir, let cook for another minute, then remove from heat, and s(w)erve.
