Ingredients
1/2 teaspoon cornflour (for pan)
4 egg whites
1 cup caster sugar (slightly finer than regular U.S. sugar)
1 tablespoon cornflour
1 teaspoon vanilla
2 teaspoons vinegar
Topping-
1 cup cream, whipped
 
Interior of 1 passionfruit
1 banana, sliced
Several strawberries, sliced
1 kiwifruit, sliced
1/4 cup pineapple pieces

Instructions
Preheat oven at 230°F (110°C). Grease springform pan (a pan with removable sides and bottom) and sprinkle with 1/2 teaspoon cornflour.
Beat egg whites until stiff. Add sugar gradually and continue to beat until mixture is stiff. Fold in 1 tablespoon cornflour and add vanilla and vinegar.
Place mixture in springform pan. Bake at 230°F (110°C) for 1 and 1/4 to 1 and 1/2 hours, until firm, without allowing pavlova to color.
Cool pavlova on tray. Remove from pan. Spread the whipped cream on top of the pavlova. Cover with fruit pieces. Serve.
