preheat oven to 175c.
beat egg until fluffy.
add almond, vanilla, sugar and mix.
mix the flour, baking powder and salt and add to mixture.
fold in shelled pistachios
spoon into the middle of a baking sheet.
bake for 30mins.
slice and return to oven to brown slightly.
