     Sweet Pickles

Ingredients
75 cucumbers 4-5 inches or large cucumbers cut into 2 inch chunks
Brine of 2 c. salt to 1 gallon water
 

Instructions
Scrub and cut up cucumbers if necessary. Put is a big plastic or glass container. Pour brine over cucumbers. LET STAND ONE WEEK. Drain cucumbers.
Next 3 mornings make a bath of 1 gallon boiling water and 1 T. alum and pour over cucumbers.
4th day - Drain off alum water. Heat 6 cups of vinegar, 5 cups sugar, 1/3 c. pickling spice and 1 T. celery seed to boiling point and pour over pickles. 5th day - Drain off liquid and add 2 more cups sugar. Heat to boiling point and pour over pickles
6th day - Drain off and add 1 more cup of sugar; boil and pour over pickles. 7th day - Pack into jars and process for 10 minutes until jars seal.
